DIM lunch, a typical Filipino food. Stewed fish with some greens added. The fish I cook is tilapia, topped with young sweet potato leaves.
This is a quick-prep food. Throw in the fish to boiling water with ginger and onions, simmer for 15min, add the greens, then add salt and vinegar to taste when the greens are half done.
And notice that load of rice? Yes, yes…to carbo-phobic people out there, I am Asian and I am a rice eater, and I move a lot so I need a ton of energy. Mind you, plain simple rice is much better than your breads. Ha!
